Beat the Valentine’s Day rush, cook at home!

No matter how hard you try, sometimes you can’t beat the rush and craziness of going out on Valentine’s Day. Instead, relax and cook with your loved one(s). Here’s two simple but delicious recipes (stress-free and romantic) for your night! And if you don’t like seafood, then swap for chicken or sau·téed vegetables!

Shrimp Scampi with Pasta:

Ingredients: 1) 1 pound linguine 2) 4 tbsp butter 3) 4 tbsp olive oil 4) 1 red onion, finely diced 5) 3 cloves garlic, minced 6) 1 pound shrimp 7) 1/2 cup dry white wine 8) 1 lemon, juiced 9) 1/4 cup fresh parsley, finely chopped 10) pinch of salt, pepper, garlic powder, and red pepper flakes

Directions: 1) Bring a pot to a boil, cook linguine until tender, 6-8 minutes. Drain. 2) Melt 2 tbsp butter and 2 tbsp oil over medium heat, cook onion, garlic, and spices in it, until the onions are translucent, 2-4 minutes. 3) Season shrimp with salt and pepper 4)Add shrimp to pan, cook until pink, 2-3 minutes. 4) Remove shrimp 5) Pour white wine and lemon juice into the same pan, bring to a boil and scrap the brown bits off of the bottom of the pan, incorporating into the sauce. 6) Melt 2 tbsp butter and oil into the pan. 7) Add linguine, shrimp, and parsley in the pan. 8) Season with more salt and black pepper. 9) Serve!

Pairs nicely with any white wine. Cheers!

Dessert: Deconstructed Strawberry Cheesecake

Ingredients: 1) Dozen strawberries 2) 5 oz cream cheese, softened 3) 2 tbsp chopped nuts (walnuts, pecans, almonds, whatever you have handy!) 4) 1 tbsp confectioners’ sugar 5) 1/2 cup mini chocolate chips

Directions: 1) Cut off the stems, and dice strawberries into fourths. 2) Beat the cream cheese until fluffy, add in the nuts, chocolate chips, and sugar. 3) Put the cream cheese on a dish, spreading it out. 4) Add sliced strawberries on top!
